My friend Donpaul (donpaul@andrew.cmu.edu) got a recipe from a friend of his in Santa Cruz, experimented a bit, and came up with this:
Tortilla: Sundried Tomatoe & Basil
sprinking of blue & feta cheeze (more feta than blue)
black beans (soak overnight)
Then microwave the tortilla for a little bit (maybe like 30 seconds) to make the cheese melt. Don't overdo it, you don't want the cheese to get runny.
add a bit of each, sliced and diced:
top with (optional):
Salsa optional, quite tasty without.
